Mint Avocado Mousse

2 medium size avocados

1/2 cup coconut cream (milk from a can) or choice of milk alternative

1 -2 tablespoons of honey or maple syrup (can also use 4-5 drops of liquid stevia)

3-4 drops of mint flavoring


Cut avocados in half and remove the seed. Scoop the avocados into a blender.Add 1/2 the coconut milk and blend.

Add sweetener of choice, mint and remaining milk. Blend until smooth. Taste before removing from the blender to determine sweetness and mint flavoring to liking.


This recipe can have so many variations. Add in 2-3 tablespoons of raw cacao powder for chocolate goodness or leave out the mint and add a nut or seed butter for peanut butter chocolate flavor. Leave out the chocolate and just add fruit. Possibilities are endless!

I also like to add a couple tablespoons of chia seeds for extra fiber and omega-3.  Increase milk to 3/4 cup.
