Honey Garlic Chicken Dish

Prep time reflects using frozen stir-fry veggies.  In the summer I would steam fresh veggies from my local farmer's market.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/2 teaspoon Himalayan Salt
  • dash of red pepper flakes
  • 2 teaspoons garlic powder
  • 3 cloves garlic, minced
  • 1/3 cup honey
  • 3/4  cup chicken broth
  • 2 tablespoons coconut aminos or  soy sauce
  • 2 bags frozen stir-fry veggies (or veggies of choice)

  • Directions

    1. Season chicken with salt, red pepper flakes and garlic powder; set aside.
    2. Heat cast iron skillet over medium high heat; sear chicken on both sides until golden and cooked through.

    FOR SAUCE:
    1. When chicken is done and cooked through, add the garlic between the chicken and cook until fragrant (about 30 seconds). Add the honey, chicken broth and coconut aminos or soy sauce. Continue to cook until the sauce thickens. Stir frequently so sauce does not stick to pan and burn.
    2. Meanwhile, add frozen veggies to a covered casserole dish and microwave per directions.  If using fresh veggies, steam until done, but not mushy. Drain.
    3. Remove chicken from pan and cut into strips, placing in casserole dish on top of veggies. 
    4. Drizzle sauce from pan over the chicken and veggies and serve!

    This recipe would pair nice with brown rice or quinoa as well.
