Slow Cooker Oatmeal Breakfast

1 banana

1 cup blueberries

1 tablespoon maple syrup

1 cup steel cut oats or old fashion oats

1/2 cup canned coconut milk

1 cup water

1 tablespoon cinnamon


In a medium size slow cooker, slice banana to cover the bottom.

Pour 1/2 the blueberries over the banana.

Drizzle maple syrup on top of fruit.

Pour oats around on top of fruit.

Add coconut milk and water and cinnamon.

Sprinkle remaining blueberries on top.

Turn slow cooker on low for 1 hour before bedtime, then turn to the warm setting overnight. Oatmeal will be thick with a slight crust on top.


This dish is a great source of protein and fiber. Fruit choices are optional and endless.  This is also good made with raisins. Summertime when fresh peaches are in season would be tasty with the blueberries instead of banana.
