Strawberry Chia Pudding

2-3 servings


1 1/2 cups coconut milk (or milk of choice)
1 cup of fresh or frozen strawberries
1/4 cup chia seeds or ground chia seeds (I prefer the ground)
2 tablespoons of Xylitol or sweetener of choice (optional)
1/2 tsp of vanilla extract (optional)


Place all ingredients in blender or food processor and blend until smooth.

Pour into a quart glass mason jar or other glass dish.

Refrigerate  4-6 hours or overnight.  Chia seeds are very absorbent and will cause the pudding to firm up. If too thick, thin out with more milk of choice. If too thin, add more chia seeds.  Sometimes when using the ground chia, it may require a little more.
High in protein, fiber and omega-3's!


This pudding is very versatile!  Be creative with your fruits and flavors.  Also tastes great with raw cacao powder and nut or seed butter.
