Are You Wasting It?

Are you wasting this vitamin enriched powerhouse by pouring it down the sink?   Then you are missing out on a healthy opportunity!

During this time of year, zucchini can be found at Farmer’s markets almost everywhere. From fritters to breads, many dishes are made that requires zucchini to be shredded and drained of its excess juice.

I always felt I was wasting perfectly good juice full of vitamins and minerals until I had an idea to strain the shredded zucchini in a mesh bag over a measuring cup.  An average size zucchini will produce ¾ to 1 cup of juice.

The body uses zucchini juice as a thirst quencher and natural coolant. In addition, it contains much-needed vitamins and minerals to help replenish fluids, and is also loved by the colon.

I like to blend together zucchini juice with a banana, a little coconut milk, and a couple drops of Stevia for a refreshing drink.

So, the next time you make a shredded zucchini recipe, turn the discarded juice into a delicious drink instead of wasting it in a dish towel or pouring it down the sink.
